Schuchin cheesemaker to produce hard Parmesan cheese
JSC "Schuchinsky butter-cheese factory" began to produce a super-hard cheese such as Parmesan, the company announced.
The first batch of cheese, with fat content of 50%, has been already made and now is being aged. The Schuchin cheese maker has developed a new process to manufacture hard cheeses using a special Italian Sakko starter culture. The new product will be named "Parmesan-west". The first batch of cheese is expected to be exported. The company process engineers are satisfied with the result and like the taste of the product. Subsequently, the company plans to produce 1 to 1.5 tons of cheese per month.
The Schuchinsky butter-cheese factory was brought into operation in December 1969. The joint-stock company specializes in production of rennet cheeses. The estimated factory capacity is 100 tons of milk processed per shift. The company produces 13 items of cheese, with products of different fat content in each product line. More than 60% of the products are export shipments.
